Quesadilla in a Hurry / Dinner at 11 p.m.
Two tortillas; put one in a pan. Then
grate some cheese, like marble, white and yellow,
colby jack, enough to hide tortilla
number one. A teaspoon of red salsa,
hot or not – it’s your tongue that’s at stake here -
dribbled, bright red dots, across the cheese. A
wreath of blue fire needles holds the pan up,
hot, as hot as your stove gets, and soon the
cheese will start to glisten, then to melt.
Tortilla number two can go on top now.
(See how number one shrank with the heat!) Just
flip it now, give number two a minute
to get brown – and out. It’s done. Before you eat it
let it cool a bit. It’s not a big meal,
and not fancy, but it’s fast. Right now I’m
hungry. I don’t want to mess around.
